1. Ingredients: Corn is first crushed and then ground into a fine powder. For every 100 kg of flour, add 30 to 35 kg of water, 5 kg of yeast liquid, and 0.5 kg of sodium alginate. Mix with a little warm water until fully dissolved and well blended for use. To prepare the yeast liquid, soak 2 kg of dried noodles in 3 kg of water for 1 to 2 days. When starting the machine for the first time, mix 2 kg of the raw mixture with 3 kg of water and let it sit for 2 to 3 days. This helps activate the fermentation process.
2. Processing Method: Once the ingredients are ready, turn on the food self-cooking machine for about 5 minutes. Add a small amount of the mixture to test if the extruded vermicelli is fully cooked. Once the texture is correct, cut the strands to the desired length based on packaging needs or consumer preferences. During production, it's recommended to use a small blower to gently blow the freshly made vermicelli, which helps prevent them from sticking together. After processing, avoid exposing the vermicelli directly to sunlight or outdoor drying immediately, as this can cause curling and affect the appearance. Instead, place them in a well-ventilated area for 3 to 4 hours before moving them outside to dry thoroughly. This careful handling ensures a better quality product with an appealing look and texture.
