- 2 cups of chopped vegetables (I used mushrooms, bell peppers, and spinach)
- 1/4 cup of grated Parmesan cheese
- 3 cups of shredded mozzarella cheese
Instructions:
Preheat your oven to 350°F and grease a 9x13 inch baking pan. Start by mixing the spaghetti sauce with your chosen vegetables in a large bowl. In a separate bowl, combine the cottage cheese, eggs, Italian seasoning, and Parmesan. Spread half a cup of the vegetable and sauce mixture evenly across the bottom of the pan. Next, lay out a single layer of lasagna noodles on top. Then, take about a cup of the cottage cheese mixture and spread it gently over the noodles—imagine you're frosting a cake. Top this with a cup of the vegetable-sauce mixture, followed by a cup of shredded mozzarella. Repeat these steps two more times, finishing with another layer of mozzarella cheese on top. If you're feeling adventurous, sprinkle some extra Parmesan and Italian seasoning on the very top.
Now, here’s something interesting: I’ve never pre-boiled my lasagna noodles because they always turn out perfectly fine without it. However, I recently read a tip suggesting that if you prefer softer noodles, you can place them in the baking pan and pour boiling water over them. This sounds like such an easy fix compared to boiling them separately! For this recipe, I used store-bought spaghetti sauce, but I've been meaning to experiment with homemade sauce since I’ve heard it’s quite simple to make. Perhaps next time! And if you'd like to try adding meat, feel free to incorporate 1 pound of ground beef or turkey into the mix.
To complete the meal, I often serve my lasagna alongside a hearty salad and some crispy garlic bread toasted under the broiler. It’s the ultimate comfort food experience!
