Wine brewing is a complex and delicate process that varies significantly depending on the type of wine being produced—whether it's red, dry white, rosé, sparkling, sweet dessert wines, or liqueurs. Each style requires specific techniques to achieve its unique flavor, color, and texture.
When making red wine, the process begins with red grapes. However, it’s important to note that white wines can be made from either white or red grapes, depending on the desired outcome. Once the grapes arrive at the winery, they are first crushed and destemmed. This step helps separate the pulp and juice from the skins and stems. The crushed grapes are then passed through a stemmer to remove the stems, although some winemakers may choose to retain them for added tannin structure.
After this, the grapes undergo alcoholic fermentation. This typically lasts between 4 to 10 days, using either natural yeast present on the grapes or commercially added yeast. During this time, the grape skins release tannins and color into the juice—a process known as maceration. The length of maceration depends on the type of red wine being made. For example, young, fruity wines may have a short maceration period, while those intended for long aging require extended contact to develop more complex tannins and depth.
Once the desired extraction is achieved, the wine is transferred to a new container, separating it from the solids (skins, seeds, and stems). This is often done by pressing the remaining pulp to extract any leftover juice. The resulting wine tends to be darker and more tannic, and the longer the pressing, the more intense the bitterness becomes.
Finally, many red wines go through a secondary fermentation called malolactic fermentation. In this step, lactic acid bacteria convert sharp malic acid into softer lactic acid, making the wine smoother and more stable. After this, the wine is aged—either in oak barrels or stainless steel tanks—before being bottled and enjoyed.
