Wine brewing is a complex and delicate process that varies greatly depending on the type of wine being produced—whether it's red, dry white, rosé, sparkling, sweet dessert wine, or liqueur. Each style requires specific techniques to achieve its unique flavor, color, and texture.
When making red wine, the process begins with red grapes. However, it’s worth noting that white wines can be made from either white or red grapes. The first step in red wine production is destemming and crushing the grapes. This involves removing the stems and breaking the grapes open to release their juice. The purpose of this stage is to separate the pulp and juice from the skins and seeds, which will later contribute to the wine’s color and tannin structure.
Once the grapes are crushed, they are transferred into fermentation vessels. Natural or added yeast initiates alcoholic fermentation, which typically lasts between 4 to 10 days. During this time, the grape skins, seeds, and even some stems are left in contact with the juice. This process, known as maceration, allows the extraction of tannins and pigments from the skins, giving red wine its characteristic color and structure. The length of maceration depends on the desired style of the wine. Shorter times result in lighter, fruitier wines, while longer maceration leads to bolder, more tannic wines that are suited for aging.
After fermentation, the wine is often transferred to a new container to stop the maceration process. This step, called racking, separates the liquid from the solids. The remaining grape solids are then pressed to extract any leftover juice, though this portion tends to be more tannic and bitter. The more pressure applied during pressing, the more intense the tannins become.
Finally, many red wines undergo a secondary fermentation called malolactic fermentation. In this process, lactic acid bacteria convert sharp malic acid into softer lactic acid, resulting in a smoother, more balanced wine. Once this is complete, the wine is aged in barrels or tanks before being bottled and enjoyed.
